If you like fish, can I recommend the following sauce - mayonnaise, wasabi paste, coriander, green onion (i.e. what most people call shallots but aren’t actually shallots) and lime juice. Mix together and spread on baked fish. Delicious! I had this for dinner last night, and loved every mouthful. Don’t overdo the wasabi though, especially if you’re not used to it - it can be a shock to the system!

I used to call them green onions, then had to re-educate myself when I came to Aus. and call them shallots. So they’re green onions all along.. What are real shallots then?

Green onions, Allium fistulosum are also called spring onions, salad onions, bunching onions and scallions, especially in Britain. Welsh Onions are a cultivar (breed) within the species. They are smaller than leeks.
In Australia, perhaps especially in Sydney, they are called shallots.
Here real shallots (French grey challot or griselle) are Allium oschaninii, called “eschallotts”. They have heads composed of multiple cloves, similar to garlic. The have brown grey or rose skin, and white flesh often with green or pink tinges.
The white skinned Persian shallot is Allium hirtifolium Boiss have 1 or occasionally 2 bulbs per plant.
